Crispy Monkfish Scampi made with coconut flour

We all love a bit of fried fish, the crispiness of the batter, the delights of the fish. But the takeaway can see you pilling on the pounds.

Therefore why not try my crispy Monkfish scampi made with coconut flour!!

Ingredients

🐟 2 x Monkfish tails cut into thumb sized pieces

Batter

190g cornflour

90g coconut flour

300ml water

10g salt

Zesty peas

🥬 2 cups of peas

🍋 zest & juice of 1/2 a lemon lemon

Tartar Sauce

🍦 200g goats yoghurt

🥄 2 spoons capers

🥒 2 large gerkins chopped

🍋 zest & juice of 1/2 lemon

Method

1. Batter – whisk together and leave in fridge for 30 minutes

2. Dip the Monkfish in the batter and deep fry until golden brown, drain and season

3. Sauce – roughly chop gerkins and capers and mix together with all other ingredients.

4. Boil peas, drain and grate in lemon zest before juicing.

5.Enjoy
